Patishapta Pita has been used in many events in the south Asian culture.The Sankranti festival takes place every year in India on January 14. A Hindu celebration of the harvest, and an occasion on which sweet and savory rice flour crepes are known as patishapta pita is eaten. Patishapta is a particularly popular form in Bengal and Bangladesh. It is also eaten during Eid, an Islamic holiday, in the morning to start the feasts for the day. They’re slightly browned and feature a coconut or molasses filling. There is no right or wrong way to create this recipe however, the pita (crepe) batter must sit for an hour or so before it is cooked. These are best eaten the same day, preferably when still warm, as a snack or dessert. For this recipe you will need the following ingredients: 1/2 cup flour1 cup rice flour3 tbsp sugar1/2 tsp crushed cardamon seeds1 tbsp butter385 ml evaporated milkFor sweet mixture:2 pieces of cardamon 1/2 cup molasses1 cup water

# Let's Begin!
#* In a sauce pan heat up one cup of water, then the sugar and molasses.
# In a separate bowl, mix the flour, rice flour, and cardamon seeds.
# Once the molasses mixture is ready, combine it flour mixture.
# Add one cup of lukewarm water into the mixture.
# Mix the ingredients really well in the bowl. Making sure there are no lumps.
# Add 1/4 cup of luke warm water to the mixture.  Continuing mixing.
# Leave the mixture to marinate for 8 hours. This will ensure you have a good mold and consistency.
# On a non stick fry pan pour the evaporated milk, add 2 pieces of cardamon and boil until the milk is thick. Stir constantly so the milk does not burn on the bottom of the pan.
# Add 1/2 cup molasses, 3 tbsp sugar to the mixture.  Once it is all mixed together. Turn off the heat and clean out the fry pan.
# On a fry pan apply a layer of butter on the fry pan and then take your pita mixture that has been marinated and with a soup spoon take the mixture from the bowl and place it into the fry pan. Like making a pancake
# For 10 seconds put the lid over and leave it alone.
# After 10 seconds put the gravy on one side and slowly pick up the pita and roll it forward.
# Should look like a burrito
